Mexicaltzingo #27 Guadalajara, Jalisco
A torta ahogada is a bolillo (or birote) roll filled with carnitas and submerged in red sauce. Since 1960, Don José, on his bicycle, has brought the rich flavor and tradition of this typical Jalisco dish to his customers, traveling the streets and whistling outside factories to let the workers know breakfast had arrived. One characteristic of these tortas is that the sauce is raw, giving it a very distinctive flavor.
